I was working in the kitchen a few nights ago and I realized that although I love to cook, I hate meal prep days (which I don’t do very often). I’ve tried several methods over the years….I’ve spent a Sunday afternoon getting ready for the following week. I’ve spent an entire Saturday cooking for a month, and although in the end those methods did give me food to pull out and cook, it wasn’t much fun. Cooking is one of my favorite things to do, and I love to watch cooking shows and learn new skills. Chasing my two littles, working, volunteering throughout the week usually leaves me scrambling to figure out what to make each night. It’s no wonder that my crockpot/Insta-pot and my freezer are two of my favorite inventions! Every few weeks I will pull out one of these appliance and add one of the following little tricks to help me out for the week.
Cook an entire bag of frozen chicken in the crockpot. Then cool and freeze the cooked chicken in quart freezer bags in smaller portions. I use this chicken for stir-fry, tacos, enchiladas, sandwiches, and salads.
I cook 3-4 times the amount of brown rice that I need and save it for later in the week.
If I’m making a casserole, I make two and put one in the freezer for a later date.
Whatever recipe I choose for Monday night, I make a double recipe so that we can have leftovers for the next 2 nights. I usually do this on a Monday, then I have supper already planned for Wednesday night, which is a busy one in our family. Add a fresh salad or steamed bag of veggies and it’s a new meal.
